Most of the time you can find me in the kitchen testing and trying new healthy recipes that make not only you feel good but your gut as well.
-Here you will find healthier recipes of your favorite foods! I believe that eating healthy is such an important part of life that often gets overlooked. Maybe we don't have time, are in a rush, think it's "too hard" I will give you easy and quick recipes, that can be meal prepped and eaten over the week! Having a healthy sustainable diet crosses over into so many other parts of your life. Eating the right foods control your energy for the day, your organ functions and so much more!
Chicken sausage rice skillet.
This Dish is easy and simple. Leaving you satisfied, complex carbs from the rice, protein from the sausage and gimme all the veggies.

Ingredients
-3 Chicken Sausages (I used Hot italian)
-1 green bell pepper
-1 container of white mushrooms
-1 small red onion
-1 jar marinara
-your favorite rice (however much you want)
-fresh garlic cloves
Seasonings I used
-salt/pepper
-dried basil
-dried parsley
-garlic powder
-onion powder.

Step 1
Chop both pepper and onion into thin strips, dice mushroom into slices. Oil pan and sear until golden brown
Step 2
In a saucepan add the cooked veggies, 3 garlic cloves minced fine. Chop your sausages into circles, and brown in the pan you seared the veggies in. Once seared add the sausages into the saucepan.
Step 3
Once all the veggies, sausages are into the pan, add your jar of marinara. Add all your seasoning (measure with your heart!) simmer on low for an hour.
Step 4
Start your rice about 30 minutes into the cooking. Once the rice is done serve rice on the bottom of the bowl and add your sauce and veggie mixture on top. Garnish with fresh tomatoes and green onion and enjoy!

Chicken Lo mein
Skip the takeout and make this quick and tasty dish that will have you questioning whether to order panda express again.....

Ingredients
-2 chicken breast
-lo mein noodles
-green onion
-fresh ginger (or powder)
-garlic cloves
-baby bella mushrooms
-1 yellow onion
-olive oil
-liquid aminos
-your favorite teriyaki sauce

Step 1
Cut up 3 cloves of garlic, and about 1 tablespoon of fresh ginger, add it to a bag with a jar of teriyaki sauce. Then add your chicken breast and place into the fridge for about 4hrs.
Step 2
Chop your onion, and mushrooms up, and saute in a pan with drizzle of olive oil. Once both onion and mushrooms are golden brown add soy sauce and some teriyaki sauce (measure with your heart)
Step 3
Once your veggies are cooked, remove them from the pan. Dice up your chicken into cubes add olive oil to the same pan and add the chicken.
Step 4
While the chicken is cooking, boil the water for your noodles. Make sure to salt the water when it starts to boil.
Step 5
Once everything is cooked, add it all back into one pan. Chop up some green onions and enjoy! The perfect dish that will save you some money:)

Homemade vegetable soup
I was obsessed with this one vegetable soup and ate it almost every day in my dorm at school, so I decided to re-create it at home!

Ingredients
-4 whole tomato
-3-4 celery sticks (depending on size)
-2 medium yellow squash's
-shredded carrots
-red onion
-kale
-1 clove of garlic
-salt/pepper
-onion powder
-dried basil
-rosemary
1 tbsp olive oil
-1 can of tomato sauce
-1 12oz carton of veggie/chicken stock
-1 can tomato paste (you will use about 3 tbsp)

Step 1
dice up all of your vegetable into small chunks and add tbsp oil to your pan on medium heat, first add squash, celery and onion. Cook until soft.
Step 2
Once your veggies have softened, add your tomatoes, carrots, salt and pepper. Next add your tomato sauce, and chicken broth and 2-3 tbsp of tomato paste.
Step 3
Once all of your vegetables are submerged in the liquids, turn your burner onto low and add in the rest of the seasonings. Lastly add 3-4 handfuls of kale. Let simmer for 1-2hrs (the longer the better)
Step 5
At this step you can taste your soup to see what you may need to add! also, you can leave it like this with chunks or blend it to a nice tomato soup texture!
Step 6
Toast some sourdough bread! this would be great pair with a grilled cheese, or just dipping the bread into the soup! lastly enjoy:))
